What Are Coffee Beans?

The coffee beans you use to brew coffee are actually seeds of a fruit referred to as a coffee cherry. The coffee plant is perennial, meaning that it will grow every year.

Origin

Coffee is a beverage made from the roasted seeds (beans) of the coffee plant. The beans are among the most coveted and profitable commodities on the planet. The most popular legend of coffee's beginnings began with a goat herder named Kaldi in Ethiopia. Presently coffee beans are made by two major varieties of Coffea plants: Arabica and Robusta. Robusta is found primarily in Africa and Indonesia and is generally more affordable than arabica. There are also many smaller varieties that are a mix of robusta and arabica. These beans are referred to as peaberries and are much more flavorful than regular beans.

During the process of roasting, beans lose their moisture, which could result in them becoming stale and bitter. To prevent this from happening, it is crucial to select only fresh, high-quality beans for your coffee.

Flavor

The type of bean, the process and climate can affect the four components of taste: bitterness and acidity along with sweetness and saltiness. The level of these elements can create a wide variety of flavor profiles ranging from fruity and sweet to nutty, or even smoky.


When coffee beans are heated they react with amino acids present in their seeds to create hundreds of unique aromatic compounds that affect their flavor. This process is known as the Maillard Reaction and it is the same chemical reaction that occurs in virtually every cooking. The result is that the smell of coffee that is roasted reflects these substances.

The Maillard Reaction is responsible for the overall flavor, but volatile and nonvolatile substances also contribute to the flavor of coffee. The taste of a fresh or unroasted bean could be earthy fruity, floral, or even chocolaty. Bitterness can be a result of full-bodied roasts containing more caffeine. However, it can also be caused by improper brewing or storage.

Flavored coffee beans come with flavor oils on them which preserve the beans and give them a distinct aroma and taste.
